I’ve been busy making my famous mince pies recently and thought I’d let you know my secret recipe. My mince pies are that good, a few years ago a stranger posed as a member of my family on social media to steal my recipe! And to add insult to injury, she started selling them at a local farm shop! Every time she cooks a batch of her, sorry, my mince pies, they sell out within minutes!

Ingredients:

  • 250g salted butter
  • 350g plain flour
  • 100g golden caster sugar
  • Mince meat
  • Icing sugar to dust

Method:

  • Pre-heat the oven to 180*c (fan). Melt the butter in the microwave until completed melted. A minute should do it. Stir to melt any remaining lumps.
  • Put your flour and caster sugar into a bowl. Add 90% of the butter. Combine. You will have to get your hands in there after this. If the mixture is still a little sticky and not yet resembling pastry, add more flour (to your hands) and work into the mix.
  • Use the remaining melted butter to grease a 12-hole cake tin.
  • Press out the pastry onto floured worktop. This is the tricky bit because it’s not like your typical pastry! I use a rolling pin to tap it out before rolling. When about half an inch thick, cut out your pastry cases. Add to the tin by gently hovering the piece of pastry over the tin and maneuvering it into position, this is done by pushing the pastry back and forth over each section gently. The melted butter will help. If you spot a crack, add some pastry to close it.
  • Add your mincemeat and pop on a lid – star or holly, whatever you decide.
  • Bake in the over for 15mins (before brown).

Hey presto! All that’s left to do is dust them with icing sugar!
