Can you believe Christmas is next month? How has that come around so quick? If you’re pulling your hair out with the thought of how many gifts you need to buy or just having a panic over the Christmas dinner, Bingo Extra can take a little bit of that stress away with a much-needed shopping voucher, but before I dish the details on how to win yourself just that, I want to share my personal mince pie recipe with you.
Now, my mince pies are famous in my village. It started a few years ago when I made myself and my family some mince pies and one of them had a visitor. From there, news quickly spread and almost everyone wanted to try them, so I made a few batches up last year and gave them to a few of my neighbours. I’ve been asked a few times for the recipe and I’ve always refused, but one person even went as far as to pretend to be my sister so I would give up the recipe, and guess what…
…she’s been selling my mince pies in shops ever since (annoyed isn’t the word). If you’re planning on making a batch of mince pies this year, why not try my recipe and let me know what you think below.
Festive Mince Pies
Ingredients:
- 225g butter chopped into cubes
- 350g plain flour
- 280g mincemeat
- 100g caster sugar
- 1 small egg
- Icing sugar to dust
Method:
- Pre-heat oven to 170*c (150*c fan). Grease two cupcake trays and set aside. Place the plain flour and golden caster sugar into a bowl and combine thoroughly. Soften the butter and with your fingers, mix into the sugary flour mixture. If the mixture is too sticky, add some more flour.
- Pop the pasty mix onto a lightly floured surface. Don’t be alarmed if the mix is falling apart – this is the key to making unique mince pies. Press the mixture together as you flatten it. This is a tricky part of the recipe, but a floured rolling pin can be used to press the mix (do not roll).
- When you’ve flattened the pastry, now you need a pastry cutter to press out the cases. Be careful when placing the pastry into the cupcake tray as it could crumble. If you notice little rips (or tears), add some pastry mix and press it gently to cover the holes.
- Add mincemeat to the pastry base and top with remaining pastry. Brush with egg and bake in the oven for approximately 25-minutes. Once cooked, remove from the oven and allow to cool for 30-minutes. Remove from the tray (a teaspoon is a good way of teasing the pies from the tray) and dust with icing sugar.

I’m not a fan of shop-bought mince pies because they come in different styles, even though their supposed to be the same thing. I’ll be giving these a try, although they do sound a little tricky to make.
